Kid friendly soup. Reduction thickens slightly and concentrates flavors.
Soup is more of a template than an exact science. Sometime I double the base vegetables. Sometimes I double the tomatoes. I use more or less garlic. To really build flavor reduce to thick paste then thin with vegetable broth saved in the freezer.
Additions
- Pasta
- Dumplings
- Beans (white beans)
- Crackers
- Grains (brown rice, barley)
- Toast (croutons)
BASE
- 1/2 onion (up to 1 onion)
- 1 celery (up to 2 celery)
- 1 med carrot
MAIN
- 10-12 plum tomatoes (or more)
- 1 med zuchinni
- 1 cup water
SPICE
- 2-4 cloves garlic
- 1/2 tsp oregano
- 1/4 tsp salt
In pressure cooker steam base vegetables and tomatoes with water. Blend until smooth. Transfer back to pot. Simmer lightly to reduce until thickens slightly to consistency of thin sauce.
