My basic green curry.
Spinach curry takes fresh greens and turns them into sauce. Other mild greens and herbs can also be mixed in. I’ve used mustard greens and cilantro. Spinach curry can also be combined with other vegetables, such as potato, or served with baked tofu.
Uses

BASE
- 1 onion, cut half
- 3 Tbsp brown lentils
- 1 bunch (8 oz) spinach
- 1 bunch cilantro
SPICES
- 2-3 cloves garlic
- 1/4 in ginger finger
- 3 Tbsp mustard seeds
- 1 jalapeño chili
FINISH
- 1/2 tsp salt
- 1 lime, juice
Can use 3 Tbsp ginger garlic paste (ginger, garlic) or curry paste (ginger, garlic, turmeric, chili, lime) if available.
Steam covered all ingredients with 1 cup water until soft. Transfer to high speed blender and blend low to medium speed. Add salt and lime juice to taste.
