Black Bean Brownies

My kids love this recipe. Good kid snack or desert. Like any bakery, high in calorie density, so for special occasions or for growing kids. Black beans are the secret ingredient for dense fudge-like brownies. This is a very forgiving recipe. It was my very first bakery recipe. Makes 8 x 8 cake pan. Keeps refrigerated up to 3-5 days.

BASE

  • 2 cups beans
  • 2 bananas

DRY

  • 3 cups rolled oats, blended into oat flour
  • 1/4 cup cocoa

FLAVOR PASTE

  • 1 apple
  • 6 dates, pitted
  • 1/2 cup almond milk
  • 1/4 tsp cinnamon
  • 1/8 tsp vanilla or 1 tsp vanilla extract

In food processor add dry ingredients then beans and bananas. In regular blender blend wet ingredients until paste. Pour and scrape paste into food processor and mix until smooth. Pour into parchment paper lined 8 x 8 baking pan. In preheated convection toaster oven bake 350F 40-50m.
