This is fun recipe. Hide the onion, garlic and red pepper from kids by blending with the chili paste. Improvise various chili powders or chili pastes with various dry and fresh chili peppers. Every pot can taste different, depending on what chilis you have on hand. Like Anaheim or New Mexico, Red Jalapeno or Arbol (hot), Chipotle or Morita (smoky), Guajillo (smoky) and Poblano (sweet). Blend garlic, 1/2 red pepper and 1 tomato with 1 cup water.
Makes 8qt crock pot.
PREPARATION
- Black beans
- Lentils
- Chili Powder or Chili Paste
BASE
- 1 onion
- 1 red pepper
- 3 cloves garlic
SPICE
- 1 tbsp chili powder (Guajillo chili), or chili paste (4-5 different chilis)
- 1/2 tbsp chipotle chili powder, or chili paste (4-5 different chilis)
- 1 tsp cumin
- 1 tsp oregano
- 1/4 tsp cinnamon
- 1/2-1 tsp salt
MAIN (Ratio 2:2:1 tomato:beans:corn)
- 4 cups crushed tomatoes
- 2 cups cooked black beans
- 2 cups cooked lentils
- 2 cups corn
Saute base, then add spices. Use chili powder or chili paste. Add tomatoes, beans, lentils and corn, and simmer 20m or more.
